Bloomsburg Fair 2017

First and foremost, can I just acknowledge the fact that in just a few days, it will be exactly one year since I’ve moved across the country to be with Roman? How surreal! When Roman and I started this blog, I was still living in California while he was here in Pennsylvania and we were sharing with all of you our travels together as well as how we were managing long distance! Time flies!

But to get back to the main topic of this post: Bloomsburg Fair! Roman and I went this past weekend along with his parents Mark and Doni. I had 3 days off and we thought, what better way to spend it than go to the fair?! We went on Saturday late afternoon and we could not get over how perfect the weather was. We picked the best day to go! I heard it usually rains this time of year so we were thrilled with our high 90’s weather!

It was Roman and I’s first time attending the fair together, which made it special but even extra special to have spent the day with his parents as well! When we got to the parking lot, I was excited to see a helicopter! I’ve never been to a fair that offered helicopter rides so that was interesting.

We were pretty hungry by the time we got inside considering we saved our appetite and we were not disappointed! There were HUNDREDS of food vendors right from the entrance and it was pretty overwhelming but in a good way of course! The very first thing we got was edible cookie dough and I couldn’t contain my excitement because earlier that day I was telling Roman how I was craving it and when he pointed it out to me, we made sure to get some right away!

Life Update! 

Hi everyone! Roman and I have gone MIA these past few months and as much as we wanted to blog, so much has happened that we hardly had any time to sit and write! But we’re back and have plenty to share with you all! ❤️

I came back from the Philippines to Pennsylvania first week of April. I had an amazing time there with family (I actually still have a few posts to make from the trip which will be up soon!) but it was nice coming back home to my love! 

So during my last week of vacation in the Philippines, I received an email from the Pennsylvania State Board of Medicine stating that I was officially licensed and can practice as a Respiratory Care Practitioner! I was licensed in California but when I moved to the East Coast, the process of getting my license took MONTHS and at times I was getting discouraged but God is so good because it came and after the big trip to the Philippines! When I got back to PA, I sent out ONE application to this one hospital that’s literally only 15 minutes from the house and the next day, I got an interview and the following day after, I got offered the job! 

One of the biggest blessings of 2017, thus far! I prayed for an acute care hospital job as a Registered Respiratory Therapist since I graduated and I am more than thrilled to have received an offer at a Level 3 NICU center as a full time employee and with a highly generous sign on bonus! I’m still in shock honestly and I’m already 3 weeks going on 4 into the job. Lol I love what I do– from working with babies to kids to adults and everyday is something different! From being in the ER, NICU, ICU, or on a patient transport from one hospital to another and being part of the critical care team… it’s surreal to think back to how much I’ve learned and gained as an experience these last few weeks.

I’m so thankful for the support I’ve been receiving on the daily basis from Roman, his parents, my family, Nan and everyone else!!! I would not be able to go through these 8-12 hour shifts without them and their love and continuous support. 

My schedule has been all over the place with orientation and now that I’m off orientation, my shifts are from 2-10pm and 2pm-2am! Roman and I are adjusting to this schedule because we have been used to being together everyday, but it’s a constant reminder for us to give it all to God and to let Him take care of our relationship and we know that He will never fail us! 

So asides my work, these other events have taken place!

Roman always loved nature but this Spring, he’s been into planting and gardening and it’s the cutest thing ever!! He’s made the front + backyard look so colorful with all the trees and flowers he’s planted!

And he has been such a handy man lately… he’s been setting up new furniture for the backyard and look how pretty this solar umbrella is!


He found his new hobby! Lol and me on the other hand… I started golf lessons with my friend Olivia and Roman’s mom, Doni! And it’s at one of the most beautiful golf clubs in North East PA!

Our classes are every Thursday night and each week they provide us unlimited drinks and a different theme! lol so far we’ve had Sangria and Margarita night! How awesome is that? Although I don’t drink, I’m sure everyone else is loved it! ☺️

And the last update for today:

Mark, Roman’s father, bought us these awesome new bikes!!!!! We were beyond excited and that was so thoughtful of him.

Day one in El Nido, Palawan

Hi everyone, I’m back from Paradise! 3 weeks of being in the Philippines was nothing but amazing, but at the same time I’m glad to be back in California and next week, I’ll be with Roman back in Pennsylvania! The jet lag is REAL. The last two nights I’ve been adjusting trying to get back to the same time zone but I’ve failed and continued to sleep at 6am and waking up at 5pm. Hopefully I’ll adjust soon!!

I can’t wait to share so much with you all. A lot has happened, new memories were created and met a lot of awesome people from all over the world!

The very first experience I’ll be sharing with you all is when my family and I went to El, Nido, Palawan. I can’t emphasize enough how much I loved it there and how much of a paradise it was. There were a total of 8 of us: my parents, my cousins, and my moms two sisters! We all had a BLAST. It was lovely just spending time with family but even better being in paradise!

Moving on, after our snorkeling, we had our lunch on the boat! Remember when the guys were cooking it behind our boat? Well ta-da! Here are all the food!! They are such chefs lol the way they cooked it all on the boat with just a grill and even the presentation.  Absolutely loved how everything was so fresh from the fruits to all the seafood! YUM!

A Birthday Celebration For A Very Special Woman

Dear Nan, 

Happy Birthday! Roman and I’s prayer for you is to find more peace, wisdom, guidance, and pure joy. May God continue to have His hand on your life and be your refuge. You deserve nothing but the best! We love you!

You are special, loved, unique in every single way and is a big blessing to countless people.

Roman and I, along with his parents Mark and Doni took a day trip out to New Jersey to celebrate his Nan’s birthday! It was not too bad of a drive; only took us about 2 & 1/2 hours without traffic!

Fun fact: George Washington crossed this same exact river on December 25, 1776, during the Revolutionary War. 

We went to Vidalia’s Italian Restaurant to meet with Nan and Papa Ken. It was a beautiful place and the interior as well as the exterior designs caught my eye.

It was so nice seeing Nan and Papa Ken again since the last time we saw them was early December. We were excited to catch up and enjoy a nice meal with them!

Every single one was DELICIOUS! The chef is amazing. The chef is actually the owner and if you’re ever in Lawrenceville, NJ, we HIGHLY recommend Vidalia’s if you’re craving some Italian food!

After lunch, we headed down to Princeton and had a nice time strolling around. The weather was great so it was perfect to walk around and see the little shops.

We went to a place called the Greene Street Consignment and oh my gosh, I could stay there for hours! They had the cutest clothes, shoes, bags– everything! Mark recommended the place since he’s been there before and the deals are great. It’s high end products for a steal price. I saw many designer stuff for less than $20 in almost perfect condition!

You can’t really see in this picture, but Mark found an AMAZING deal on this spiffy blazer– only $18 for this designer and it retails for $300+ how awesome is that?! And actually, Roman was the one to spot it also. He has such a good eye. Lol 

Once we were done shopping around, we did some more walking around and came across this one bookstore. We had to stop and purchase some books!

We ended the day by going back to Nan’s house. We gave her birthday gifts and she cooked for us her famous lentil soup and hummus!!! THE BEST LENTIL SOUP AND HUMMUS I HAVE EVER TASTED. It was delicious! I’m craving some now just as I write about it.

Roman and I bought her an essential oil humidifier. For Christmas, I gave one to Roman and he absolutely loved it and can’t sleep at night without it so we figured she’d love it just as much! We gave her some essential oils as well and we set it up for her right there and then and she was thrilled with it!!

We ended up leaving around 8pm and got back to Pennsylvania around 10:30.

We had such a wonderful time! Loved every single moment celebrating Nan’s birthday with her in Jersey with the family.

The hidden gem of the Caribbean: St. Lucia

I want to start off by saying I apologize for not being active and not posting this sooner! The past two months have been quite ludicrous! And that is an UNDERSTATEMENT! I ended up getting the flu and I mean the REAL DEAL FLU! I was away on a business trip, only to soon find myself in a hospital. Not to mention, I ended up losing over 10 pounds. It is one thing being sick, but being away from home and having the real flu; it was the worst experience of my life.

I just wanted to share a quick update about me, but enough about that…

We are on to St. Lucia!

Have you ever heard the saying?

“If you’ve been to one island, you’ve been to them all”

It is one of the most bogus statements that I’ve heard and the worst part about it is that I hear it all the time. How can one make a statement like that without experiencing it? Just like no person is the same; no island is the same. From the food, to the scenery, to the people, and etc. Each island is unique in its own way and the island of St. Lucia stands out like no other.

Our ship was docked in St. Lucia a bit longer than the other ports, but there was much to do in so little time! Being in port on Christmas Day, we wanted to make sure that we were able to attend a Christmas Day service in one of the churches. We were so blessed to have found this church!

After the church service, we did not have any excursions planned, but we wanted to explore the island. We stumbled upon an amazing driver named, Eli, who gave us an AMAZING tour of the island. I’ll let the pictures do the talking…

After the waterfall, we began to head back to the ship and we went to where Pirates of the Caribbean was filmed!

We came back to the ship to find this gorgeous sunset on our departure of St. Lucia

St. Lucia is drop-dead gorgeous. The Pitons are absolutely out of this world. They look like they have no place in the Caribbean. If you don’t have this place on your bucket list, you better put it right on. From The Pitons, to the hot springs, to the scenery; countless times I thought to myself, “is this place real?” The views are straight out from a movie. I have never seen views like this in my life and it is truly remarkable to have been able to experience it with Jesci and my parents, especially on Christmas Day. It was a Christmas that we will remember for the rest of our lives.

Happy Sunday, everyone! We hope you all had a blessed day and a great weekend. 

Our flight leaves tomorrow evening for Florida and Tuesday afternoon, we will officially be boarding the ship. We are excited beyond words and it is surreal to think that it’s finally here! December flew by quickly. Actually, this whole year flew by! 2017 is just right around the corner. Let this be a mere reminder to live each day and enjoy every single moment because before we know it, a whole year has already passed right before our eyes! Also another reminder to never go a day without letting your loved ones know how much they mean to you! 

Back to the main topic;

We spent majority of the weekend packing and getting everything together. My goal was to pack light and not bring too much luggage since I was inspired by Roman’s father, Mark, who is an expert with traveling light and can make one small luggage work for a 10 day cruise. Unfortunately, I ended up with two check-in bags, one carry on, and one big purse. I tried my best to filter out the items I don’t need, but my brain was telling me otherwise and convinced me I needed to bring it all. Lol at the end, it all worked out because despite filling 3 luggages, I was still under the weight limit of 50lbs so at least that’s good! It would have been really bad if I had tons of bags and over the weight limit! 

Roman had no problem getting his things together but that’s no surprise. Lol 

After church today, we were craving sushi so we went to Pearl Sushi Bar. The atmosphere was modern and had a nice vibe to it. Food and service were excellent too!

Mini getaway to San Francisco, CA

Seven hour drive which felt like less than two hours. I guess that’s what happens when you’re on a road trip with your best friend who also happens to be your boyfriend. Time just flies when you’re with the love of your life.. just the two of you on the road with music and enjoying the scenery.

We got lost for a little bit and didn’t realize we were headed towards the wrong direction but it was not a problem because that just meant more adventure!

When we arrived in San Francisco, we went straight to the hotel to check-in. Roman booked us a place at The Vitale and oh my goodness, the place was absolutely gorgeous! We were in the Financial District and had walking distance to the Bay Bridge and a mini farmers market just right across. Location could not of had been any more convenient.

For dinner, we were both craving sushi so we went on a mission trying to find the most appealing Japanese restaurant in the area. There were so many and we were overwhelmed with choosing a place but eventually we decided with a hole in a wall type of sushi place (I can’t remember the name) and their food was SO DELICIOUS! Seriously, I don’t know if it’s because we were starving but we loved the sushi and the chicken teriyaki bowl that I ordered.

After dinner, we decided to go to an Irish pub right next door and had a few drinks. I mean, we can’t just go to San Francisco and not experience the night life right? Roman ordered our drinks and we didn’t stay long. We had a great time though!

That pretty much wrapped up our first day in San Francisco! The next day, we walked to the farmers market and just hung out. It was nice because there was the nice view of the Bay Bridge!

After walking around the farmers market, we took a Lyft to the fisherman’s wharf. We had breakfast at a nice family owned seafood restaurant that was right on the pier. We loved it! The food and staff were superb. We loved the clam chowder! It was unique and had their own version to it.

Everything was just so delicious. I’m glad Roman and I picked this place! Clam chowder and seafood in San Francisco is a MUST!

Just as every other tourist in SF, we decided to go to the famous Lombard Street! We actually walked from the fisherman’s wharf to there and surprisingly it was not that bad. The walk was not far at all but going up the super steep hill was a bit challenging but I pushed right through it. It was a piece of cake for Roman and he didn’t even struggle one bit! Lol

Once the sun had set and the city lights were on, we went to the Twin Peaks. It’s a place that offers spectacular views of the Bay Area, and is a world-famous tourist attraction. The view truly was amazing. Roman and I loved it.
